Mother's Day Breakfast

Alright FATHERS, this is your day to strap on that apron (frills or not), roll up your sleeves, and breakfast it up.  Hopefully, this little blog post has made its way to YOU.  I have put together what I think is a rather tasty and EASY meal for you to make for a Mother's Day breakfast.  It is easy enough that the young ones can help too.



Here is the menu:

Orange Rolls
Brown Sugar Bacon
Strawberries with a Cream Dip
Drink: Orange juice, milk, or hot chocolate (you choose)


Here is what you need to check the kitchen for:

Baking sheet
Cooling rack
Tin foil
Bundt Cake Pan
Sauce pan
Zester (you can use a small grater or a micro planer)
Paring knife
Optional:  A cute tray, darling plate and cup, and a fun napkin.


Here is what you need to get at the store:
  • Butter* 
  • White Sugar* 
  • Brown Sugar* 
  • An orange*
  • 3 tubes of Buttermilk biscuits (pillsbury, NOT jumbo or Grands, just normal biscuits)
  • Thickly sliced bacon
  • Strawberries 
  • Cool Whip or Whipping Cream, whichever you prefer
  • Cream Cheese (the block)
  • Sour Cream
  • Powder Sugar* 
  • Vanilla*
  • Almond Extract*
* check your pantry or fridge for these things before you head out to the grocery store.  These are things you may already have on hand.


Brown Sugar Bacon
Make this first and while it is cooking prep the orange rolls

You need this stuff: Cookie sheet with sides (a Jelly Roll Pan), a cooling rack, foil, bacon, and brown sugar


  1. Turn on oven to 400 degrees
  2. Wrap your baking sheet (aka Jelly Roll pan, cookie sheet) with foil (this is going to help you with clean up)
  3. Place your cooling rack inside of your pan.  If you don't want to scrape stuff off your cooling rack cover it also with tin foil.
  4. Place the bacon on the cooling rack.  You can squish them close because as they cook they shrink.
  5. Sprinkle Brown Sugar over them (this is optional, but makes amazing bacon)
  6. Place the pan in the oven
  7. Set the timer for 12 minutes.  Check it.  If you like it crispier keep on cooking (set a timer for a few more minutes so you don't forget about it).  
  8. Pull it out of the oven and let it cool for about 5 minutes.  Pull the bacon off before it cools completely because it will stick to the foil or rack.   
  9. You may want to dab oil off with a paper towel, if your wife is afraid of the oil

Orange rolls

Here is what you need: Saucepan, sugar, butter, orange, zester, bundt cake pan, buttermilk biscuits.

Here is what you do:
1.  Place three packages of buttermilk biscuits into the bundt cake pan like so...just open and line them up in the pan, you don't even have to separate them. You will have to sort of squish the last few in.

2.  Melt 1 cube (=1/2 cup of butter) of butter in a saucepan.


3.  Add ONE cup of white sugar and add orange zest of one orange (so, if you don't have a zester or microplaner you can just use a very small grater.  You just want the most orange part of the orange peel.  Don't "zest" the white stuff.


4.  Add the juice of one orange.  Cut that orange you just zested open and squeeze the juice into the pan.  Then mix and as you mix watch for the sugar to dissolve a little bit.  Maybe 2-3 minutes on medium high.  You don't want it to come to a full boil, maybe a few bubbles around the edges.

5.  Dump the orange goodness over the biscuits and pop it in the 400 degree oven (the oven should still be left on from the bacon that is now cooling).

6.  Check after the time directed on the biscuit package (I think it is 10-15 minutes).  Take a look and check to see if it is done:  Take two forks and pull apart a section, if you see any gooey dough, cook for a few more minutes.  Remember, set a timer so you don't forget.  If they separate pretty clear and clean, you are ready to go!


7.  To get it out of the pan, put a plate big enough to cover the pan upside down on top of the bundt cake pan.

8. With hot pads, grab both sides and flip the pan over and the orange rolls should slide right out onto the platter, make sure to let the pan drip for a minute so you get every last bit of that mixture.

9. Pull off the hot pan and watch out for little hands all ready to put dibs on their piece.  Those little fingers love the pieces "wiff the most orange stuff"


While the Orange rolls are cooking...

1. Put the bacon on a platter
2.  Wash and cut strawberries.
3.  Make Cream Dip


Cream Dip

Here is what you need:  Cream Cheese, Sour Cream, Cool Whip, Powder Sugar (not shown here), Almond Extract, and Vanilla extract.  

1.  Put 4 oz of cream cheese into a bowl, make sure it is room temperature (soft).  
2.  Mix in 1/4 cup sour cream.  
3.  Mix in 1/2 tsp vanilla
4.  Add 1/8 tsp Almond extract
5.  Add 1/4-1/2 cup powder sugar (depending on how sweet you like it)
6.  After all this is mixed together, fold in the 1 1/2 cups cool whip.  (if you are ambitious, use real whipping cream that you have flavored and whipped)  

Put a generous dollop next to the strawberries and serve with a smile and a fresh cut flower!
